I'm also on the go, getting my business off the ground, so I don't have time to be a gourmet housewife, litterly.
Since I'm Hungarian, I love cold cut plates for dinner. Black Forest Ham, prosciutto, garlic wine salami and smoked turkey breast. I try to get these from wholefoods, cause they are uncured and besides being free of antibiotics, they're also free of stuff that tastes like chemicals. Plus, I feel better when I eat them.
So with the cold cuts, I prefer, raw onions, tomatoes, peppers, bell peppers, hungarian peppers, radishes, and if I really want some carbs, I'll do gluten free crackers and cheddar cheese, sharp. My fav tomatoes, heirloom, yummy with a little sea salt. And I don't need mustard or mayo. Not my thing. Just plain will do.
I try to break meals into small portions and 3-4 now but later 5-6.
Sometimes pickles are good too along with capers, olives, both green and black and hearts of palms. I love hearts of palms.
I try to use the plate rule but instead of grains and fruit, I do raw veggies, the cold cuts ie protein and pickled veggies ie olives, capers, hearts of palms, sauerkraut, pickles etc etc.
You don't want to mix fruit with protein, that will cause stomach problems, make it harder for the enzymes to break down your food. If I eat fruit, it will be 30-45 minutes prior to my meal not after.
For my drink of choice, club soda or seltzer water. I don't like soda, it's too sweet. And there is no calories, zero.
